My Week of Wellness: Embracing the "DIRT Diet" with Joy
Spring break at work usually means a getaway to the beach for many, but this year, I chose a different path. Instead of sand and surf, my week was filled with doctor's appointments and a realization that it was time for some lifestyle changes. My diagnosis? Hypertension. And the prescription? The DASH diet.

Initially, my reaction to the DASH diet was less than enthusiastic. In my mind, it morphed into the "DIRT Diet," which I humorously (and negatively) broke down to Dull, Icky, Repulsive, Tasteless. But as I dove into research and practiced some self-coaching, I decided to flip the script. Why not make DIRT stand for Delicious, Irresistible, Rich, Tasty? With this new perspective, I'm now excited about the culinary journey ahead.

To keep my spirits high and motivation strong over the next 90 days, I've turned to my trusty Joy essential oil from Young Living. A few drops of this uplifting blend have been my secret weapon in maintaining a positive outlook as I embrace these changes.

Tonight's recipe, I added Quinoa as a side:
Try this Lemon Garlic Herb Chicken with Sautéed Spinach—a quick, DASH-friendly dinner ready in under an hour! (From the Internet)

Ingredients (Serves 2-4)

For the chicken:
  • 2 boneless, skinless chicken breasts (or 4 thighs)
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp dried oregano
  • ½ tsp dried thyme
For the sautéed spinach:
  • 1 tsp olive oil
  • 2 cups fresh spinach
  • 1 clove garlic, minced
  • ½ tsp black pepper
  • 1 tbsp lemon juice

Instructions

  1. Prepare the chicken: In a bowl, mix olive oil, garlic, lemon juice, zest, black pepper, paprika, oregano, and thyme. Coat the chicken in this mixture.
  2. Cook the chicken: Heat a skillet over medium heat and cook the chicken for 5-7 minutes per side, until golden and cooked through (internal temp 165°F).
  3. Sauté the spinach: In the same pan, add a teaspoon of olive oil, garlic, and spinach. Sauté for 2-3 minutes until wilted. Add black pepper and lemon juice.
  4. Serve: Plate the chicken with sautéed spinach and enjoy!
Total time: 30 minutes
